I was on a podcast! And quick Monday check in.

Happy Monday!

Exciting news today… I was SHU’s featured guest this week on her podcast, Best Laid Plans!! She was looking to interview someone who plans exclusively digitally these days, and she asked me!

It’s true- I really have moved almost 100% digitally now. And after a lot of tweaking, I’ve landed on a system that works really well for me.

I had never been on a podcast before, so this was exhilarating! And I was a little nervous. But I *think* it all turned out fine. 🙂

In a perfect world I would have had a nice complementary post ready to go today outlining my digital systems, so that anyone popping in here after hearing the podcast episode could see some corresponding visuals.

But alas, I don’t have that prepared today. Sorry!! Darn work getting in the way of my hobbies.

I will try to put something together this week though. Please check back!

I mentioned last week that my nutrition has been seriously lacking lately. Don’t worry, I am not embarking on any crazy d-i-e-t or anything of the sort.

I’d really just like to reincorporate some protein, fruits and/or vegetables into my diet again!! Seems reasonable. 🙂

Ivan made a batch of (delicious) pico de gallo yesterday, so that made it easy to go healthier today.

Breakfast= huevos a la mexicana (basically scrambled eggs with pico de gallo in it). I had some refried beans on the side and added some pre-cooked diced chicken pieces on top for more protein.

Lunch= tuna + arugula + parmesan cheese + pico de gallo

Dinner is going to be, I think, chuletas ahumadas (smoked pork chops) that Ivan is picking up fresh from the Mexican grocery store on his way home. This is actually his specialty to make, so I’m planning to opt out of cooking tonight and let him have at it. 😉 He simmers them in a salsa verde with some arbol chile added + potatoes and pinto beans and big chunks of cooked tomatillos. And it’s freaking amazing. Can’t wait!

(If he gets home too late, maybe we’ll just do…. I don’t know… something random, and have the chuletas tomorrow night.)

Anyway, I’m feeling encouraged to shift my nutrition (back) away from “a bag of microwaved popcorn for lunch” to “an actual meal with nutritional value”. Wish me luck! 🙂

Daily Gratitude:

I am grateful for mild temperatures today. I took Charlie out at lunch and the sun was out…. it felt downright balmy at 38 degrees! The birds were chirping, Charlie was running around in the yard… almost felt like spring. 🙂

  1. You kicked butt – seriously, you have a knack for podcasting, Kae.

    You know I’m a paper girl at heart, but it gave me so many pangs listening to you talk: I really SHOULD up my digital planning game.

    All those food pics are making me…hungry. I’m doing my first spiritual fast with my local church (I know fasting is common for many faith groups, but very uncommon for Protestants and I have literally never known another church to have a – COMPLETELY VOLUNTARY – congregation-wide fast) and I am now on 24 hours with just water. So far so good, but my mouth is 100% watering right now. It actually feels like it fits in really well with my Year of Shmita – an Old Testament tradition – when fasting was also very common.

    Back to the podcast (sorry – big tangent, but your food looks delish) – I can’t wait to see you write all this out in blog format, too. Maybe you’ll convince me to change ways?!

  2. I fully agree! I love love love hearing you and learn more about your system. I’ll need to listen it again and write them down as I was running. I wish I was there in the “virtual room” with you and Sarah. Someone your voice was not what I expected, sweetener than I imagined? Love it!!!

  4. I am listening to the Podcast now! That is so cool, and it is fun to hear your real voice; you sound like a Midwesterner!! I don’t know why, but I did not expect that (which does not make sense).

    So funny that you took a 38 degree “balmy” walk with Charlie; we had temps in the 70s over the last couple of days, which is NOT normal, but I am enjoying it (but not the global warming!)

  7. I’m late commenting because PUPPY!!!! And also slowed down in podcast listening since my schedule of going for walks by myself has been replaced by walking the PUPPY around the yard and we’re not at the stage where I can concentrate on both her and my podcast. But even so I’ve listened to almost all of the episode and it is fabulous. I’m going to take a look at Google tasks and Google Keep.

  9. Loved hearing you on the podcast!! So many great tips and hopefully a reminder that while each of us on any particular day don’t have everything all figured out, you have a ton of knowledge and systems that are amazing and helpful to share so go you!!

  11. Arugula is the best. And also, your breakfast and lunch are SO low carb! Is that typical for you??
    I may actually listen to the podcast (not my usual genre – I prefer sports podcasts, LOL) but I swear I am the only person on the face of the planet who does not use Google Keep so I am interested to hear your take!
