Which is your favorite? I really love “Happiness is not a goal. It’s a by-product of a life well lived.” Also, the last one about being responsive to change is a powerful reminder.
Also, after a serious salad hiatus in the month of December, I’ve been having quite a lot of them now in January. Yesterday, I had TWO salads in one day!! This is rare.
First up was one of my favorites:

And for dinner, the boys had some quick ground beef tacos before a busy night of swim + soccer. I made mine into a taco salad of sorts:

The big thing for me and salads is that I don’t eat any traditional salad dressings. Like, none. Blech, yuck. I just flat out don’t like them. So if I don’t have fresh salsa to top a salad with, I’m about 200x less likely to eat a salad. If I have a tupperware full of homemade salsa though, I’m golden!!

I like basically any salad dressing if you add enough sugar to it. LOL. Most recipes are oil + acid + sweetener and I’ve found that just tweaking the ratios towards the sweet side work for me. BUT. I don’t like lettuce in general, so most of my “salads” are just chopped up crunchy veggies with a small amount of ranch dressing on the side. It’s honestly better for me than having to drown lettuce in honey or brown sugar before I’ll eat it!

I almost never eat salad at home because it requires so much chopping and I forget I have saved lettuce for that purpose, but that might be changed next week. hahah

I like that Eleanor Roosevelt quote too but you found lots of great ones!
I do like salad dressing with a preference for oil based ones, like balsamic or green-style vinaigrette. My fave salad is a taco salad with taco sauce for dressing. But I don’t eat that very often. Instead I usually have chicken and chopped veggies with a Greek vinaigrette. I eat salad for lunch pretty much every single day. I buy lunch once/week and buy a salad that day, too! But the salad I get is sooo good and has so many different toppings.

I loved the Darwin quote about change, Kae. Meanwhile, one of my recent favorite quote is from the book Foster by Claire Keegan :
“Many’s the man lost much just because he missed a perfect opportunity to say nothing.”
I have read many quotes on silence being a virtue, however this one really has stuck with me. I have a bad habit of saying a little too much a little too quickly. This quote reminds me to practice silence or at least a pause, as a perfect opportunity presented to me 😃
Also, Foster is a very small but awesome book, I heard about in What should I read next podcast. Highly recommend.

My favourite food of all time is Greek salad, and I make my own dressing. I mostly make my own dressings anyway – and I do eat a lot of salads. I love a good kale Caesar as well, but honestly, I just like salad.

I wish I weren’t so picky about the dressing thing, because it definitely limits what kinds of salads I eat. Any salad that comes pre-made with dressing on it, I’m likely to avoid… in a restaurant I can sometimes just say “no dressing” and then sub salsa if they have it, but many times that’s not an option. I eat most of my salads at home where I can decide what I top it with.

I usually don’t eat salad in the winter… I am a soup person (I feel like soup is the equivalent to summer salads) because you can throw pretty much anything in there 🙂
